Lamb’s quarters is a tasty, nutritious green. The leaves, shoots, seeds, flowers are edible.

Lamb’s quarter is great in any recipe that calls for spinach. It can be eaten in salads or added to smoothies and juices. It is delicious steamed or can be added to soups, organic sautés and much more.

Saponins in the seeds are potentially toxic and should not be consumed in excess. The leaves contain some oxalic acid therefore when eating this raw, small quantities are recommended. Cooking removes this acid.

Growing tips:Direct sow seeds. Harvest the greens in a cut-and-come again fashion. Plants grow to 1 m.
