Elena’s Rojo Amaranth is an easy  to grow, colorful plant. It is a gorgeous ornamental, and also produces delicious greens & grain.

This is a native amaranth from Guatemala that was revived after the civil war by a woman named Elena whose family saved the seeds of this variety. The flowers are a deep red. It is primarily used for grain, which is rich in vitamins A, B + E and iron.

Harvest the young leaves to eat as greens. The seed matures over a long period, so collecting several times will produce the best yields. You can also cut a branch and hang it upside down in a dry space, collecting seeds on a sheet as they fall. Some threshing may be necessary.

Growing tips — Direct seed or set transplants in rich soil with full sun. Space plants 2-3 feet apart.

Plant is drought tolerant, but will produce better with sufficient moisture.
